Tomatoes! Tomatoes! Tomatoes!

I swear I have eaten a tomato or two or three every single day for like the last 4 weeks. I wouldn't even say I planted to many of them. I will say,  I probably have eaten to much yummy bread, pasta and mozzarella to go along with them!
 We have been in tomato heaven! Good thing I planted a bunch of basil right next to them.

 I need to share one of my favorite tomato recipes......

****Great Tomato Soup*****

6 Tbl Butter
2 small onions chopped
4 cloves garlic chopped
1/2 C dry white wine
3 lbs (4 or 5 cups) chopped tomatoes
1 tsp salt
1/4 tsp pepper
1 C chopped fresh basil
1/2 C heavy cream

First of all I will say if you want a really smooth soup you should peel the tomatoes, I choose not to and I don't mind the texture of the skins. ( My kids might disagree, but they still slurp it up like crazy!)

--Saute the onions and garlic in butter at a low heat while you chop the tomatoes and basil. When onions are soft add the wine, tomatoes, salt, pepper and basil. Cook at a medium heat for about 10 min or until really soft. Puree in a blender and add it back to your pan.  Stir in the cream and any additional salt and pepper to taste.

Please, Please, Please eat this with some super yummy bread! Some chunks of fresh Mozzarella wouldn't be so bad with it either!
So simple........So Good!!!!!!!
